Asparagus
and artichokes pancakes
with Sardinian Artichokes
Ingredients for 4 people: 250 g flour; 3 eggs; 6 artichokes;
300 g asparagus; milk; 1 lemon juice; extra-virgin olive oil; salt
Clean the artichokes by removing
the hard leaves and spines, then cut them in thin slices. Soak
them in water with the lemon juice for about 10 minutes. Drain
and soak them in boiling water for 3 minutes. Wash the asparagus
and soak them in boiling water for 2 minutes. Drain them and sauté in
little oil. In the meantime, make a batter by mixing together the
flour, the eggs, a dash of salt and some milk to soften the mixture.
Put the artichokes and asparagus in the batter, then using two
spoons start to pour small amounts of the batter in boiling oil.
Fry the pancakes, then put them on a foil of absorbent paper to drain
from the oil, salt them and serve them.
